Salted Caramel Jelly Recipe


(serves 4 to 6)
10 grams agar agar  
200 gr  granulated sugar
150 ml  water
5 gr Sea salt
How to make agar jelly caramel
To make caramel, granulated sugar and 50 ml water in a heavy saucepan.
Cook over very gentle heat and stir constantly, making sure the sugar is dissolved and then increase the heat to medium till the solution turn deep golden in color and starts to boil.
In another saucepan, combine agar agar with remaining water and add into sugar caramel boil until agar agar completely dissolved.
Pour into a mold, allow agar agar mixture to cool before putting into the refrigerator to set.
When agar agar has set, turn it out on a serving plate sprinkle same sea salt and serve
